Tropical Green Smoothie

Green Smoothie

My boyfriend is not the best at eating his fruits and veggies-- his idea of a 'healthy' salad choice is with fried chicken and heaps of Ranch dressing. Imagine my surprise when he asked if I would start making him smoothies in the morning (I make one for myself every weekday morning), and then even more surprised when he told me my tropical green smoothie was his favorite. With good-for-you greens and delicious fruits, this smoothie is a yummy and healthy choice for hot days.

Tropical Green Smoothie
- 1 Banana
- 1/3 cup Pineapple tidbits (I use frozen from Trader Joe's)
- 1/3 cup Mango (Again, I use frozen from Trader Joe's)
- Large handful Spinach
- Large handful Kale, stalks removed
- ~3 tablespoons Greek Yogurt
- 1 tablespoon Coconut Oil
- 1 tablespoon Chia Seeds
- Squirt of honey
- 1 cup Coconut Water
- Ice

Combine all ingredients in blender and blend. Enjoy!

Four Favorites: Weekend Getaway

Linking up for another Four Favorites this week with my top picks for the perfect items needed for a weekend getaway (which is also much needed for me!). A large tote that can carry everything I need-- clothes, swimsuit, wallet, cellphone-- I currently go between a sparkly silver weekender bag and an oversized hot pink tote, but I love how classic this linen tote is, and the splash of yellow on the bottom brightens it up and gives it a summery feel. Cute wayfarers and a fun hat are also musts whether you're sitting poolside, shopping, or wandering outside-- I have the staple Fedora and floppy hats, but a Panama hat will be my next buy-- how adorable is this one with the little side bow?! 

I also always bring a book or  several magazines with me when I go away-- F. Scott Fitzgerald is one of my favorite authors and a story about his wife seems right up my alley!

Link Love

Happy Monday! The weekend was extremely low-key-- hung out at the pool on Saturday and ran errands on Sunday. The days and the nights have been hot, but thankfully not sweltering... yet. Here's to hoping this is a quick week! 

Take a  peek at some of my favorite links from the past week (and a couple of rando's I threw in!):

I love finding a new drink to become obsessed with and summer is the best time to cool off with a yummy drink.  These three summer cocktails from Cupcakes and Cashmere sound absolutely divine and are just begging to be made... and drank.

This weekend I attempted Free People's DIY wood photo transfer and I think I did a pretty good job! I'll post the final photos of my project once I paint and complete the frames. 

 The entire Paula Deen story has been a shock-- I've been watching her since high school and can't fathom Food Network without her! I noticed this weekend they had already bumped off her regularly scheduled shows with others. I did however, catch her son Jamie Deen's new show and learned a fun trick on making baked taco shells. Blown away.

I love cute tank tops but usually only pair them with a bikini top. Enter bralettes, which are the perfect undergarment to wear underneath. Colorful, lacey, and uterly feminine,  The Average Girls Guide breaks down some top picks.

Since last year I have been obsessed with chambray (who isn't?) and lately I've been loving it paired with stripes and especially love this Look For Less from Say Yes to Hoboken.

The above quote rings so true-- I have always been a huge bookworm, letting the stories take me to places I've never been, meeting so many people and characters that aren't real, and living experiences through another. I haven't been reading as much for the past few months and frankly, I miss that feeling of getting lost in a good book. I think it's about time I get back in!

Red, White, and Blue Berry Chia Smoothie

Happy first day of summer! With the Fourth of July looming ahead (ahh- we're now officially in bikini season!), I wanted to share a berry smoothie recipe that I've been drinking this week for breakfast. Packed with antioxidants from the blueberries and strawberries, potassium from the banana, and omega's from the chia seeds, this smoothie is not only healthy but super yummy!

Red, White, & Blue Berry Chia Smoothie
- 1 Banana
- 4-6 Strawberries
- Handful of blueberries
- ~3 tablespoons Greek Yogurt
- 1 tablespoon Chia Seeds
- Squirt of honey
- 1 cup Water
- Ice

Combine all ingredients and blend-- happy sipping!

Note- It looks seedy, but is actually very smooth-- the chia seeds blend well.

Beach Must-Haves Under $50

Summer Must Haves

Towards the end of the week, I can't help but start day dreaming about the warm sun, sandy beaches, and salty air. Last year during this time I was living in Manhattan Beach, a small beach city south of  Santa Monica. On weekends I loved heading down (literally down the street!), parking myself on the sand, and taking out a good book. I have always loved the beach but since moving I haven't been down to the beach yet-- fingers crossed that I'll get out there this weekend!

My beach must-haves include a cute swim suit (how adorbs is the tribal print on these bikini bottoms?!), a bright tote, a floppy hat, and of course sunscreen to protect my skin from harsh rays:

Four Favorites: Florals

Last month I posted some fun spring florals I was coveting; florals are one of my favorite prints, so pretty and girly, so I had to come back this month to share more floral faves.

When picking out my last phone case from Rifle Paper Co. this was #2 on my list, I just HAD to get the pretty pink ombre. On another note, how cute are those floral sunnies? At $16.99, these are a MUST.

My Week on Instagram: Cookies, Pizza, & Bluegrass

While browsing through the myriad of food blogs I follow, I came across Picky Palate's recipe for Frosted Flakes White Chocolate Chip Cookies... O M G, these are delicious! Slightly crispy on edge, chewy in center, and filled with chocolate chips and crushed frosted flakes (so good in this cookie-- gave it a sweet salty crunch). Try these-- even if it means turning the oven on-- you will not regret it!

Spent the day cruising Newport Harbor with the family-- it wasn't the prettiest day, but still relaxing. Until the boat broke down and we had to be towed to the dock :/
Luckily my dad is hoping the motor will be totally fixed in the next couple of weeks. Looking forward to going out again!

Another new iPhone app obsession: Afterlight. This app has easy-to-use photo editing tools with filters, textures, adjustment tools, and other neat tools (including frames!). I love how professional it makes my photos look!

Pizza Oom Yum Yum: Taking inspiration for spinach & artichoke pizza from  How Sweet It Is, I made my own using Trader Joe's pizza dough (and rolled it out into a super shoddy oval-rectangle... and yes, Steve made fun of it), mixed ricotta, spinach, garlic, and artichoke hearts as base and topped with mozzarella, parmesan, olives, and shrooms. Good stuff.

Long story short, this past weekend we ended up at the Huck Finn Jubilee in the IE. I'm not a huge country fan but I'm down for a little bluegrass. There were bands, shows, vendors, games, and fishing. Steve mainly wanted to go to fish in the little park "lake," and wanted to teach me. I casted (see, I even know the technical terminology!) my line and on 2nd or 3rd, this lil guy came up-- my first fish!

Confession: Fish freak me out and the only reason I was able to put my face thisclose to that thing is because wine was involved. Yuck.

I've been dying to try ziplining and they had a short one set up going over the "lake."
Even though it was super quick, I had fun and would definitely do it again-- even my mom did it!

I'll admit it-- I actually liked a couple of the Bluegrass bands that played: Detour and The Hillbenders, who did a pretty good cover of MGMT's Kids.

Honey Lime Shrimp with Sesame Noodles

Sesame Noodles

I have been meaning to get this recipe up for weeks now-- it's both easy and delicious. I came across a recipe for sesame noodles originally posted by The Pioneer Woman and thought the addition of honey lime shrimp would be the perfect compliment.

Honey Lime Shrimp
-  1/2 -1 lb. Shrimp, cleaned and de-veined (can remove tails if you'd like)
- 1 Lime, juiced
- 1 tbsp Honey
- 2 Cloves Garlic, minced
- 1 tsp. Crushed Red Pepper
- Sprinkle off Salt & Pepper
- 1-2 tsp. Soy Sauce
- 1-2 tsp. Sesame oil

Sesame Noodles (recipe from The Pioneer Woman)
- 12 oz. thin noodles (I used linguine)
-  1/4 cup Soy Sauce
- 2 tbsp. Sugar
- 4 Cloves Garlic, minced
- 2 Tablespoons Rice Vinegar
- 3 Tablespoons Sesame Oil
- 1/2 tsp Hot Chili Oil (I didn't have this so I added a couple squirts of Sriracha)
- 3-4 tbsp. Canola Oil
- Sliced Green Onions

Combine all ingredients for honey lime shrimp; cover and refrigerate for at least 1 hour. Boil large pot of water and cook pasta/noodles. While noodles cook, whisk together all ingredients (except for the green onion) in a bowl-- taste as needed (I added additional squirts of Sriracha).

Heat frying pan on medium heat and cover with a few drizzles of olive oil and add shrimp, cooking until pink and done.

Drain noodles, return to pot, and pour sauce over noodles; toss to coat. Add shrimp and sprinkle with green onions. Enjoy!
