They may kinda sort of look like meatballs, but these little balls pack a lot of protein and a lot of flavor. They are no-bake and SUPER easy to make. Almost too easy. I had to double check to make sure I wasn't missing any steps. Packed with oats, seeds, nuts, chocolate, and of course peanut butter, these balls are a great mid-morning snack or afternoon pick me up-- and they're so good you'll forget about all the goodness they're packing!

Peanut Butter Protein Bites
1/2 cup Peanut Butter
1 cup Old Fashioned Oats (dry)
1/3 cup Honey
1/2 cup Ground Flax Seed (or wheatgerm)
1/2 cup Peanuts
1/2 cup Chocolate Chips (I used semi-sweet since that's what I had, but you can use cacao nibs, dark chocolate, whatever suits your fancy!)
1 tbsp. Chia Seeds
1 tsp. Pure Vanilla Extract

Other optional ingredients:
Coconut flakes
White chocolate chips
Dried cranberries
Other dried fruits
Other nuts (crushed almonds, pecans, cashews)

Crush peanuts and chocolate chips (I put in food processor for a couple of quick pulses); put all ingredients in bowl and mix to combine. I ended up mixing with my hands because it was a lot easier to get all the ingredients combined, but very sticky. Good excuse to lick my fingers :P

Cover bowl and chill in the refrigerator for at least 30 minutes. When ready, pinch off some "dough" and roll into balls, about 1-inch diameter. If you prefer larger or smaller balls, go for it. Store balls in the refrigerator in an air-tight container. For alternatives, try including the other ingredients for balls that are all your own!

  3. These look good!! I like to make something similar, ingredients never measured or quite the same, b/c I may need to add a little more of this or that. I like the idea of the chocolate with the peanut butter. I've only tried making uncooked squares with cashew or almond butter. I have peanut butter to use, so I want to make - soon!
