To me, grilling reminds me of summer even through here in California it's grilling weather pretty much all the time. If your'e stuck in the snow and cold, bring a little summer into your home with this meal. The lemon and tzatziki sauce made with
Chobani Non-Fat Plain Greek Yogurt bring such a fresh, cool taste that takes you to the shores of the Mediterranean. Not able to grill on the BBQ outside? Get a grill pan and grill over the stove!
Lemon Grilled Chicken
Ingredients:
~1 lb. Chicken Breast
1/4 cup Olive Oil
2 tbsp Red Wine Vinegar
1 Lemon, juiced and zested
1 tbso. Garlic, finely chopped
1 tbsp Dijon Mustard
1 tsp Basil
1 tsp Oregano
Salt & Pepper
1 Red Onion, cut into chunks
Cut chicken breast into skewerable (is that a word? I just made it one!) chunks (or leave whole) and place into a zip-close bag. Whisk marinade ingredients and pour over chicken. Marinade 6-8 hours or overnight. After marinading, put chicken onto skewers with red onion, I added lemon wedges to the skewers for extra flavor. Cook on grill until done. Serve with below tzatziki sauce, rice and pita or flatbread.
Tzatziki Sauce
Ingredients:
1 cup Chobani Non-Fat Greek Yogurt- Plain
1 tbsp Garlic, finely chopped
1/2 Lemon, juiced
1 tbsp Dill, finely chopped
1/4 cup of chopped cucumber
Salt & Pepper to taste
Mix all ingredients in a small bowl. Cover and refrigerate several hours to allow flavors to blend together. Serve with lemon grilled chicken, falafel or as a veggie dip!
