I love my morning breakfast smoothies but sometimes I need a little break from them but still want something on the healthy side... and something I can eat quickly or on-the-go. This base of this parfait is packed with antioxidant rich berries and is so yummy topped with creamy yogurt, crunchy granola and fresh fruit. Mmmm!
Berry Granola Parfait
1 cup Frozen Mixed Berries
1/4 cup Water
1/2 - 1 tbsp Honey
Fresh Fruit: I used raspberries and a banana but you can change it up- kiwi, blueberries, nectarines, peaches, strawberries- whatever you like!
Puree the frozen mixed berries, water and honey in blender. Once smooth, pour into glasses and refrigerate to set. After about 10 minutes, add a couple of scoops of yogurt over the berry mixture. Top with granola and fruit and you are good to go!
